COOK IT WILD

This October, Pilguse Residency hosts the first Cook It Wild – a four-day culinary gathering bringing together international and local chefs, foragers, mixologists and food professionals in Saaremaa.
Over four days, the group will explore Saaremaa’s forests and coastline, meet local producers, forage wild ingredients, exchange knowledge and experiment with food and drinks around the open fire. The programme combines hands-on workshops, foraging expeditions and two dinners open to the public.
Cook It Wild is built around a simple idea: to go directly into a landscape, learn from the people who know it, and cook together – connecting generations of local knowledge with contemporary gastronomy.
11–12 October · Industry Days
On Sunday, the Cook It Wild team arrives at Pilguse to meet local producers, discover the character of the region and explore the surrounding landscape, gathering ingredients to work with over the following days.
Monday is dedicated to hands-on workshops and foraging in the forest and along the coast. The day concludes with a Table Talk Dinner, which is open to the public.
12 October · Table Talk Dinner

An evening around the table bringing local and international food professionals together to share knowledge, stories and ideas about Saaremaa’s food and landscape.
13 October · Cook It Wild Gala Dinner
The culmination of Cook It Wild is a multi-course gala dinner cooked over an open fire and shaped by ingredients gathered from the forests, coastline and local producers of Saaremaa.
Before dinner, guests are invited to discover Mix It Wild, accompanied by a selection of curated bites. The dinner will be complemented by carefully selected wine and non-alcoholic pairings.
Guests can also pre-book a guided smoke sauna experience or massage before dinner.

Guided Smoke Sauna Ceremony
A two-hour smoke sauna experience guided by Evelin – €55 per person.
The price includes a towel, herbal teas, herbal steam infusions, ash and herbal salt scrub, egg shampoo, and a refreshing dip in the spring and natural pool. Fruit and nuts are also served as part of the sauna experience.

Accommodation
Accommodation at Pilguse Residency starts at €65 per night for a double room in the Annex and goes up to €240 for rooms and suites in the main house. Breakfast is included.
