Bubbly Boys & Crew is our excuse to open a few interesting bottles and lean into that cozy, end-of-year atmosphere where everyone suddenly becomes a sparkling-wine person. The idea is simple: a handful of interesting pét-nats and that warm, slightly celebratory feeling the season tends to bring, whether you planned for it or not. Nothing formal, nothing stiff — just a gathering where bubbles do most of the work.

Pét-nat (short for pétillant naturel) is sparkling wine made the old-fashioned way, before we got fancy with all the modern champagne techniques. Instead of finishing the fermentation in a separate bottle, pét-nat is bottled while it’s still fermenting, so the bubbles form naturally inside. The result is usually a bit wilder and less predictable — softer fizz, sometimes a little cloudy, with flavours that feel a bit more “alive” compared to classic sparkling wine.

What We’re Drinking

Tilisma Pétillant Naturel Kisi–Khikhvi

This is the kind of pét-nat that feels like stretching before the main event. It’s light, soft-fizzy, and has those gentle stone-fruit and citrus notes that show up before you even think about them. There’s also a clean finish that makes it feel refreshing without trying too hard. It’s a good opener — friendly, easy to approach, and not begging for attention.

Tilisma Pétillant Naturel Saperavi

Then we flip the mood with a sparkling red. Saperavi already brings a darker berry flavour, and the slight spritz gives it a curious lightness, almost like a berry dessert that someone decided to carbonate. Despite the colour, it doesn’t drink heavy — it’s the kind of wine you can sip while sitting back and just listening to whatever conversation is happening around you.

Tilisma Pétillant Naturel Rosé

This one sits comfortably between the first two — a rosé pét-nat that’s a bit playful, a bit fruity, maybe even slightly floral on the nose. It’s not trying to impress with intensity; it’s simply pleasant, pretty to look at, and very easy to drink. Good choice if you like middle-ground things that don’t demand you take notes while tasting.

Tilisma Rkatsiteli–Mtsvane Pétillant Naturel

A crisper, cleaner pét-nat — the sort of wine that pops with a tiny bit of green apple or something orchard-y like that. The bubbles are subtle but present, and the whole thing ends up feeling bright and tidy. It’s probably the most “refreshing” bottle of the lineup, the one you reach for if you want something that resets your palate rather than filling it up.
Why This Tasting Works for the Season

There’s something about bubbles that fits this time of year. Maybe it’s the lights everywhere, maybe it’s the urge to wrap things up and mark the moment somehow. Either way, sparkling wine just makes the room feel a bit warmer and more celebratory without anyone needing to say anything out loud.
